Fruit preparations for ice cream and dairy
Fruit preparations for ice cream and dairy — yoghurt, dahi, shrikhand and flavoured milk — in strawberry, pineapple, peach, raspberry, orange, lemon and lime. Available for sampling.
Function only. This page does not make a nutrition or health claim.
- What it does
- Carry a named fruit into ice cream or a dairy base so the plant doses a prepared ingredient rather than cooking fruit on the same line.
- In the plant
- Heat-treated so it can be dosed into a cooled base
- Texture set for the line you name in the brief
- Raspberry is available seeded or seedless
Formats you can brief
Stir-in or mix-through
A preparation for folding into yoghurt, dahi, shrikhand or an ice-cream mix.
Layer
A heavier preparation that can sit as a layer under a dairy filling.
Flavoured-milk base
A preparation briefed for flavoured milk rather than for a spoonable dairy.
These preparations are the core range and are available for sampling. The fruits are strawberry, pineapple, peach, raspberry (seeded or seedless), orange, lemon and lime. They are briefed for ice cream and for dairy: yoghurt, dahi, shrikhand and flavoured milk.
Where they are used
Ice cream from economy to premium, including gelato, soft-serve, frozen yoghurt and plant-based frozen desserts when that is the line you run. Cultured dairy and flavoured milk. Bakery and HoReCa where a fruit preparation is the right format for the process. Name the line on the sample form.
What you specify
The fruit, paste or pieces, and whether the preparation is stirred in, layered or used in a drink. A reduced-sugar option can be requested. This page does not set a formula, a ratio or a dosage.
Indian-fruit preparations, including guava, jamun, sitaphal and Alphonso, are in development. Those sit on the product range and are pilot samples, not this line.
