Sorbet base
A fruit base for a sorbet mix.
Water-ice base
A fruit base for water ice, briefed separately from sorbet when the texture differs.
Sorbet and water ice need a fruit base that is not the same ingredient as a dairy preparation or a pumped ripple. These bases are available for sampling.
Fruits
Strawberry, pineapple, peach, raspberry, orange, lemon and lime. Say which fruit, and whether the finished product is a sorbet or a water ice, on the sample form.
